with Kitty O'Neal and R.E. Graswich

"Standby, and 3, 2, (1)" the show begins.

Kitty O'Neal, R.E. Graswich, and the ever-attentive Harris The Board Operator (far right) open the show and prepare for serious eating.

"Every Friday we like to highlight a local restaurant maybe a little different to the community.... Today we're highlighting a Davis Restaurant specializing in food from Eastern Europe.... Little Prague [Bohemian Restaurant]."

R.E.: "Joining us live in the KFBK studio with all the details is Václav Burger... Václav welcome to KFBK."

Václav: " Hello everybody!"

R.E.: "First off you've got to tell us what you're restaurant is all about and what you've brought [for us to sample]..."

Václav: "...My wife is a very good cook and that's how everything started... She cooked for us at home and we said, okay lets share with everybody else [our cusine]...."

Václav comands the mic.

Kitty: "I've only tried two things because you've only just come in and they're both salads but they're both delicious [in particular] this potato salad. I love it!"

Václav: "Potato salad is very traditional. We eat a lot of Potato Salad around Christmas, too. It's very traditional meal plus we serve with that chicken schnitzel, pork schnitzel."

Kitty: "Tell us what a schnitzel is..."

As Václav describes the fine art of schnitzel, Harris, attentively controls audio levels, station break elements, and his food cravings. [He's from Bosnia so the dishes are very familiar to him.]

Kitty: "...So this would be considered home cooking?"

Václav: "Exactly."

Kitty: "And what are some of the favorite things that you brought today that you enjoy?"

Václav: "Potato pancakes, chicken schnitzel, cold soup made with cucumbers & cream which is great for summer... and we have an [adaptation] of our tripe soup where we substitute clams for tripe because American's won't eat tripe and to me it's even better with clams."

R.E.: "I'm digging into this potato salad and I'm a potato salad kind of guy...This Prague style potato salad ... is amazing. You didn't change this for american tastes?"

Václav: "No I did not."

R.E.: "So tell us what makes this potato salad so wonderful."

[Wearily Václav lists the ingredients but guards the secret of using Czech gurkins rather than American dill pickles. (Don't tell anyone.)]

Kitty rightly suspects there's something missing from the recipe.

Kitty: "...But that's a very good potato salad, I have to say... Those are the typical ingredients but there's something about that combination that is particularly wonderful "

Did someone say Russian-like?!

Kitty: "You know, Václav, we have Harris who is one of our board operators... He speaks 5 languages! ...[Harris] you have to tell Václav in one of your native tongues how good you think this is and you said this is like your mom made."

Harris: "Yah, because I come from Eastern Europe, too, from Bosnia. So our food is similar to their food... The schnitzel he was talking about is one of my favorite dishes that my mother makes. And also the cucumber salad... yeah, soup, is also very similar to one of my favorite things my mother makes."

The proud talk-show host looks on as her Eastern boy "parlays" Bosnian to Czech.

Kitty: "You also brought some desserts. So tell us what is a typical dessert? I always think of a torte or...."

Václav: "It will be strudel. ...Plus we have a lot of other desserts. We produce about 30 different cakes, plus the famous Palachinka [palačinka]. Which I have to tell you, you have to order ahead of time. They are not available all the time. ...It's a crepe stuffed with a fruit and sprinkled with chocolate and it's a hot dessert."

[Off-mic Harris agrees with palačinka bigtime!]

Needless to say, the show was a hit, the food a huge hit, and Václav fancies
he has a potential new career in broadcasting.
